Trader Joe’s Recipe: Cowboy Flatbread

Make it Tex-Mex pizza night, any night of the week, with this 3-ingredient Trader Joe’s dinner hack! Cowboy Caviar may be a bit spicy for some, so feel free to swap in any other mild corn and black bean salsa.

You can manage to make 2 flatbreads out of these three ingredients (flatbreads are sold two per package), which will run you about $10 total.

If you only want to make one flatbread, freeze the other ingredients for up to 3 months. Transfer the Cowboy Caviar and shredded cheese to separate plastic containers or zip-top freezer bags.

  • Trader Joe’s Sprouted Whole Grain Pizza Crust
  • 3/4 cup Trader Joe’s Cowboy Caviar (sold in 13-oz jars)
  • 1 1/2 cups Trader Joe’s Mexican Blend shredded cheese
  • Optional: Diced avocado and chopped cilantro

Preheat oven to 400 degrees (preheat a pizza stone, if you have one).

Spread Cowboy Caviar to cover flatbread in an even layer, leaving a 1-inch border along the edges. Sprinkle cheese on top.

Bake on pre-heated pizza stone (or on a pan) for 10-12 minutes, or until cheese is melted and crust is crispy. Garnish with avocado and cilantro.
