Grilled Chicken Sausage and Peppers

Grilled Chicken Sausage and Peppers

30-40 min

There is only one was to one-up a one pan meal. Cook it on the grill! Grilled Chicken Sausage and Peppers is a fun twist on classic sausage and peppers, cooked in a grill pan on any evening the weather cooperates. This comes together quickly with a handful of ingredients and compliments a cold beer quite nicely.

Nutrition Notes

These days, you have a whole lotta options when it comes to pre-cooked chicken sausage, but not all are created equal. Look for products with short ingredient lists (i.e. you recognize everything listed), safe preservatives (i.e. no nitrates), moderate sodium, and low or zero sugar. Aidell’s, Bilinski’s, Al Fresco, and Aldi’s Kirkwood Never Any! brands are recommended picks.

  • Olive oil or nonstick cooking spray
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 large red onion, sliced
  • 3-4 whole garlic cloves
  • 2 Tbsp olive oil
  • Kosher salt and pepper
  • 12-oz good quality pre-cooked Italian chicken sausage, quartered
  • 1 cup cherry tomatoes

Preheat a gas grill or prepare a charcoal grill for medium-high heat. Oil a grill pan with olive oil or nonstick cooking spray.

Toss peppers, onion and garlic cloves in olive oil and season liberally with salt and pepper. Transfer to the grill pan, then grill over indirect heat for about 15 minutes, or until the peppers begin to caramelize but don’t char.

Add the sausage and tomatoes to the pan and use tongs to toss well to combine. Continue to grill over indirect heat for 10 minutes, or until sausage is heated through and tomatoes begin to burst.

Serve as-is, or with rice, potatoes, or a salad…and a beer.

Meal Prep Tips

Slice the peppers and onions up to 4 days in advance.
