Grilled Chicken Sausage and Peppers
30-40 min
Ingredients
- Olive oil or nonstick cooking spray
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 large red onion, sliced
- 3-4 whole garlic cloves
- 2 Tbsp olive oil
- Kosher salt and pepper
- 12-oz good quality pre-cooked Italian chicken sausage, quartered
- 1 cup cherry tomatoes
Directions
Preheat a gas grill or prepare a charcoal grill for medium-high heat. Oil a grill pan with olive oil or nonstick cooking spray.
Toss peppers, onion and garlic cloves in olive oil and season liberally with salt and pepper. Transfer to the grill pan, then grill over indirect heat for about 15 minutes, or until the peppers begin to caramelize but don’t char.
Add the sausage and tomatoes to the pan and use tongs to toss well to combine. Continue to grill over indirect heat for 10 minutes, or until sausage is heated through and tomatoes begin to burst.
Serve as-is, or with rice, potatoes, or a salad…and a beer.
Meal Prep Tips
Slice the peppers and onions up to 4 days in advance.
And chomp on the red onion while you wait?
