If there was ever a messy food I could get behind, it’s these Easy Weeknight Sloppy Joes. I don’t care how old you are, Sloppy Joes are so easy to love at any age. And worth the mess. This version is heavy on the veg and light on the added sugar, but leaves nothing to be desired in the flavor department. Manwich, who?

Nutrition Notes

Hold the sugar: Control the amount of sugar by using no-added-sugar tomato sauce. Add 1 tablespoon of brown sugar to start, then adjust to taste.

Easy swaps: Feel free to use ground turkey or chicken instead of beef.

Ingredients
  • 1 lb lean ground sirloin
  • 3/4 cup finely chopped red onion
  • 3/4 cup finely chopped red bell pepper
  • 3/4 cup finely chopped green bell pepper
  • 3 garlic cloves, minced
  • 1 cup tomato sauce (no sugar added)
  • 1/4 cup ketchup (aim for no HFCS)
  • 1 Tbsp Dijon mustard
  • 1-2 Tbsp brown sugar
  • 2 tsp chili powder
  • 1 tsp Worcestershire sauce
  • 1/4 tsp ground cinnamon
  • Kosher salt and pepper
  • Whole grain hamburger buns
Directions

In a large skillet, brown meat over medium heat, breaking up with the back of a wooden spoon. Add onion, bell pepper, and garlic and saute 5 minutes, or until vegetables are very soft. Season mixture to taste with salt and pepper.

In a bowl, combine tomato sauce through cinnamon and mix well to combine. Stir into beef mixture and bring to a boil. Reduce heat and simmer, uncovered, for 10 minutes, or until sauce has thickened. Season to taste with additional salt and pepper. Serve on hamburger buns.

Meal Prep and Serve Tips

Prep ahead: The comes together in 20 minutes when you prep ingredients in advance. Chop the the onions, peppers, garlic, and prepare the sauce up to 3 days ahead of when you plan to cook.

To serve: Keep things simple by pairing this with steamed broccoli or green beans, or a salad. Roasted sweet potato fries would partner well, too (shortcut: use Alexia Sweet Potato Fries).
