Smoked Salmon Cobb with Everything Bagel Vinaigrette

Smoked Salmon Cobb with Everything Bagel Vinaigrette

10 MIN

Everything Bagel-style seasoning blends have been trending for the last few years. It’s a mainstay in our pantry and the perfect topper for avocado toast or eggs, but I also discovered it works great to season salad dressings (it contains all the key players – garlic, onion, salt). This is the first time I created the dressing before the salad.

For the salad:

  • 5 oz baby kale/greens
  • ½ small english cucumber, sliced
  • ½ avocado, sliced
  • ½ cup cherry tomatoes, sliced
  • ¼ small red onion, thinly sliced
  • 2 radishes, thinly sliced
  • 2 hard-boiled eggs, halved
  • 4 oz smoked salmon
  • Optional: Extra “Everything But the Bagel” seasoning blend

For the vinaigrette:

  • 1 tablespoon “Everything But the Bagel” seasoning blend*
  • 3 tablespoons cider vinegar
  • 1/3 cup neutral-flavored oil, like avocado oil or light olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon dijon mustard

*I like the Trader Joe’s version, but it’s becoming readily available in most grocery stores

Divide the baby kale between two large, wide bowls or plates. Top each with half of the cucumbers, avocado, tomatoes, onion and radishes. To each bowl add a hardboiled egg and half of the smoked salmon. Drizzle with vinaigrette to taste. For extra texture/flavor, top with an extra sprinkle of “Everything But the Bagel” seasoning blend.

Serves 2.
