Forget take-out. This vegetarian lentil and garbanzo bean curry is on the table in under 10 minutes thanks to a handful of ingredients (just 4!) from your neighborhood Trader Joe’s. It’ll also cost you less than $4 per serving! Look for Trader Joe’s Melodius Blend, a combo of cooked green and red lentils with green garbanzo beans, in the frozen foods section.
Trader Joe’s Recipe: Melodius Masala Curry
10 MIN
Ingredients
- 15 ounce jar Trader Joe’s Masala Simmer Sauce
- 13.5 ounce can Trader Joe’s Reduced Fat Coconut Milk
- 2-12 ounce bags Trader Joe’s frozen Melodius Blend
- Trader Joe’s frozen Organic Jasmine Rice (2 pouches from 1 box)
Directions
In a medium saucepan over medium heat, whisk together the masala simmer sauce and coconut milk until combined. Bring to a simmer and stir in both bags of Melodius Blend. Continue to simmer, stirring occasionally, for 3 to 4 minutes or until lentils and garbanzo beans are heated through.
In the meantime, follow package instructions to heat rice. You’ll need two pouches for this recipe. Each pouch heats for 3 minutes in the microwave.
Dish rice into bowls and serve topped with curry.
Serves 4.
Do you have to use coconut milk?
Hi! I haven’t tested this one without it, but you could try with just the jarred masala sauce and one bag of the melodius blend. You could try stirring in some cream or half and half at the very end for a bit of creaminess.
