Trader Joe’s Recipe: Loaded Sweet Potato Fries

30 MIN

As if we needed another reason to eat (healthier) festival/fair/carnival food on a weeknight, this recipe requires just three ingredients from your neighborhood Trader Joe’s (or substitute your fave grocery brands, see sidebar) and 30 minutes. Save yourself the dishes and let people dig in, family-style. Round it out with a side of fresh cut fruit and plenty of napkins.

Easy Swaps

No Trader Joe’s in your ‘hood, no problem (also, bummer!).

Substitute any brand of frozen sweet potato fries (like Everyday Value or Alexia) and canned chili (like Campbell’s or Amy’s).

  • 15 oz. bag Trader Joe’s Sweet Potato Frites
  • 15 oz. can Trader Joe’s Chili (Vegetarian, Turkey, or Beef)
  • 4 oz. Trader Joe’s Monterey Jack Cheese, shredded (about 1 cup)
  • Optional: Diced avocado, sliced green onions, sour cream

Preheat oven to 425 degrees. Line a sheet pan with parchment paper.

Spread sweet potato fries on the sheet pan in an even layer. Bake in pre-heated oven for 18-22 minutes, or until crispy.

In the meantime, heat chili in a small saucepan for 5-6 minutes, or until hot and steaming, then set aside.

Remove sweet potato fries from the oven and top with chili, followed by the shredded cheese. Return pan to oven and cook for 3-4 minutes more, or until cheese is melted.

Serve topped with diced avocado and sliced green onions.
