BBQ-Style Rotisserie Chicken Flatbreads

Add this to your “things to make with leftover chicken” or “ways to use a rotisserie chicken” lists. These are total crowd (i.e. kid) pleasers and require only a handful of basic pantry and fridge staples. Naan flatbreads are the perfect weeknight alternative to wrangling pizza dough and can be frozen and quickly thawed on demand.

A Better BBQ Sauce

Shopping for a healthier bottled BBQ sauce? Scan the label for these three things: Tomato sauce, paste, or puree as the first list ingredient, no high-fructose corn syrup, and less than 8g of sugar per serving.

Ingredients
  • 1/2 cup favorite bottled BBQ sauce, divided
  • 1-2 cups leftover or rotisserie chicken, shredded
  • 2 6-inch Naan bread or flatbreads
  • 2/3 cup cup mozzarella cheese, shredded
  • 1/4 cup sliced red onion
  • Chopped cilantro
Directions

Preheat oven to 350 degrees.

Toss leftover cooked chicken in 1/4 cup of the BBQ sauce (more to taste) and spread remaining 1/4 cup of sauce on top of flatbreads.

Top each flatbread with half of the chicken, followed by 1/3 cup cheese and 2 Tbsp of the red onion.

Bake flatbreads on a sheet pan in preheated oven for 8-10 minutes, or until chicken is heated through and cheese melts. Remove and top with chopped cilantro.
