Nothing beats the crispness of a big romaine lettuce Caesar salad. But when the temps drop and snow falls, this warm, sautéed kale version is a welcome alternative to the classic. Warm Kale Caesar Salad is a great way to use up leftover chicken or that wilting bunch of kale beckoning you from the veg drawer.

Nutrition Notes

Kale is a frequent flyer on the “top superfoods” lists, and for good reason. One cup of raw kale provides more than your daily recommended intake of vitamins K, A , and C. It’s also rich in antioxidants that boost eye health and may protect against macular degeneration and cataracts.

Ingredients
  • 2 T olive oil
  • 1 bunch lacinato kale (about 1 lb), stems removed, leaves coarsely chopped
  • 2 garlic cloves, sliced
  • Creamy Parmesan Dressing (store-bought or this one!)
  • Croutons
  • Cooked chicken breast
  • Grated parmesan cheese
Directions

In a skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds. Add kale and cook until just wilted, about 3 minutes (it should still have a bite/texture). Add enough dressing until kale is lightly coated (2-4 Tbsp or to taste). Toss in croutons. Serve topped with cooked chicken and extra grated parmesan cheese.

Meal Prep Tips

This meal comes together in minutes, especially when the kale is chopped in advance, the chicken is already cooked, and the dressing is made. Keep in mind, using pre-washed/chopped kale, rotisserie chicken, and bottled salad dressing is 110% acceptable here.
