Perfect Coconut Rice

If you’re looking for a coconut rice recipe that is perfectly balanced and not too coconut-y, this is the one. It cooks up perfectly in about 20 minutes and pairs really well with Asian-style dishes, like stir-fries and curries. Be sure to use light coconut milk which keeps the flavor mild and the rice fluffy, not mushy. Feel free to stir in chopped cilantro, lime juice, toasted sesame seeds or chopped peanuts after cooking.

  • 1 can light¬†coconut milk
  • 1 1/2 cup water
  • 1/2 tsp salt
  • 2 cups white jasmine¬†rice

Optional mix-ins:

  • Chopped cilantro
  • Lime juice
  • Toasted sesame seeds
  • Chopped peanuts

In a medium saucepan with tight-fitting lid, bring coconut milk, water and salt to a boil (watch this closely as it can quickly boil over). Stir in rice, return to a simmer and cover. Reduce heat to medium-low and cook for 15 minutes. After 15 minutes, remove from heat and allow to stand for 5 minutes, covered. Fluff with a fork and serve.
