I’ll say it again. This is my favorite way to stretch leftover chili, sloppy joes, taco filling or lettuce wrap stuffing when there’s not quite enough leftovers to go around. If you don’t know where to start with meal prepping, my suggestion? Bake some sweet potatoes. Try will get miles out of them.
- 4 cooked medium sweet potatoes*
- 4 cups leftover chili, any variety
- Diced avocado, sliced green onions, shredded cheese

Split potatoes down the center lengthwise, being careful not to slice all the way through. Heat leftover chili in a saucepan until steaming (or microwave). Top each sweet potato with chili and toppings.
