Quick Sweet Chili Beef Stir Fry

Ingredients
- 1/2 cup sweet chili sauce
- 1/2 cup reduced sodium soy sauce
- 1/2 tsp ground ginger
- 1 lb lean ground beef
- 3 garlic cloves, minced
- 2 cups frozen bite-size vegetables (like peas, carrots, and/or edamame), thawed*
- 1/4 cup sliced green onions
- Cooked rice
*To thaw quickly, put vegetables in a strainer and run under lukewarm water for a minute or two.
Directions
In a bowl, whisk together the sweet chili sauce, low sodium soy sauce, and ground ginger. Set aside.
In a wok or saute pan, brown ground beef over medium heat until cooked through, about 4-5 minutes. Use the back of a wooden spoon to break apart. Add minced garlic to pan and cook for 30 seconds.
Pour sweet chili-soy sauce mixture over beef and bring to a simmer. Stir in vegetables and continue to simmer for 2-3 minutes, or until vegetables are cooked through.
Stir in sliced green onions and serve over cooked rice.
I just made this for a last minute dinner get together. I was lucky enough to have all ingredients on hand. It was meant to be! I added a bit of finely chopped red onion to the pan with the garlic, and about a teaspoon of Sriracha to the sauce. Everyone loved it! I m definitely adding this to the meal rotation ??
