Looking for a way to stretch what’s left of the pulled pork (or chicken, or beef)? You know, when there’s enough for about 2 sandwiches and you’ve got a brood of hungry boys to feed before they finish the entire bag of Goldfish crackers? Here’s your answer. Leftover Pulled Pork Tostadas. Dinner problem solved.

Simple Supper Swaps

Use any leftover proteins, like shredded beef roast or cooked chicken, in place of the pork. Or keep it veg-friendly by topping the refried beans with sautéed onions and peppers.

Ingredients
  • Tostada shells
  • Canned refried beans
  • Leftover pulled pork, chicken, or beef
  • Toppings: Sliced avocado, queso fresco (or other cheese), green onions, cilantro, fresh lime juice
Directions

Preheat oven to 350 degrees.

Arrange tostada shells in a single layer on a baking sheet. Top each tostada shell with a thin layer of refried beans, gently to avoid breaking the shell. Layer on some pulled pork and a sprinkle of queso (or other cheese).

Bake in preheated oven for about 10 minutes, or until toppings are heated through. Top with avocado, green onions, etc.

Alternate method: Heat refried beans and leftover pork separately before layering on tostada shell, then throw under the broiler for a minute or two to melt the cheese.
